The schema.org site is generated from the files in the /data directory <https://github.com/schemaorg/schemaorg/tree/main/data> [1] of the github repo. The relevant files for term definitions are now in ttl (they were RDFa when the site I linked to was generated, but same information), for example schema.ttl <https://github.com/schemaorg/schemaorg/blob/main/data/schema.ttl> [2]. The conversion is done by a python script, also on github <https://github.com/schemaorg/sdopythonapp/tree/main> [3] (sdoapp.py <https://github.com/schemaorg/sdopythonapp/blob/main/sdoapp.py> seems to do the heavy lifting).
